Sweet or salt?
What is your breakfast philosophy? Do you prefer a sweet French breakfast with croissants and jam? Or do you indulge in a hearty and protein-rich breakfast like English? Here are some good arguments for the latter, and some delicious recipes.
Large breakfasts can be very healthy
A hearty breakfast, especially rich in protein, is the basis for a good start to the day. It keeps you full for a long time and prevents cravings because it decreases the concentration of the hunger hormone ghrelin and at the same time increases the concentration of the satiety hormone GLP-1 (glucagon-like peptide 1).
In addition, the consumption of proteins boosts the metabolism. The body needs more energy to break down protein than it does to break down carbohydrates and fats.
Foods that are especially high in protein are:
- Eggs
- Cottage cheese or cottage cheese
- Cream cheese
- Turkey breast
- Cooked ham
- Smoked salmon
- Tofu
- Peanuts
- Pumpkin seeds
- Sunflower seeds
You can do a lot of magic with this, right? But you always have to make sure you don't use too much fat and salt when cooking. Here are some delicious and healthy breakfast ideas.
Deluxe avocado toast
We don't need to explain what avocado toast is, right? In this recipe, the avocado is served with blanched spinach, a poached egg, and roasted peanuts on whole wheat toast.
Omelette with ham
Ingredients for 2 people:
4 eggs
Salt and pepper to taste
6 tablespoons fresh parsley
2 slices of cooked ham
preparation:
Beat the eggs with a fork in a bowl, not too long, but until smooth.
Season with salt, pepper and chopped parsley.
Heat the olive oil or butter in a large skillet over medium heat.
Pour the egg mixture into the skillet and stir the mixture with a spatula when the eggs begin to set.
When the eggs are almost set, place the ham slices on top. Remove the pan from the heat, remove the tortilla from the pan on one side with the spatula and fold the peeled edge inwards. Next, roll the tortilla completely. It is not turned over and fried on the other side, but it is less cooked on the inside than on the other side.

Roll with cream cheese and smoked salmon
The bagels are simply delicious. They have a wonderful texture and can be covered to taste. Our tip: herbed cream cheese, smoked salmon, red onion and some capers if desired.
Turkey sandwich
Butter whole wheat bread and top generously with turkey breast. You can complete it with a little arugula salad and a teaspoon of blueberry jam.
English breakfast
Fancy something stronger in the morning? Then the English have just what you need. A full English breakfast usually includes fried eggs, sausage, bacon, baked beans with tomato sauce, fried tomatoes, and mushrooms. We omitted the bacon and substituted it for steamed spinach. For two people you need:
2 large eggs
4 sausages of your choice (vegetables if desired)
250 g of baked beans in tomato sauce (should be about half a can)
100 g of spinach leaves
1 large tomato
100 g of mushrooms
Salt and pepper to taste
preparation:
Cut the tomato into slices and clean the mushrooms. Cut the mushrooms into quarters.
Heat the pan and add a tablespoon of sunflower oil. First the spinach and sausages are fried in them.
As soon as the sausages begin to brown and the spinach soften, the eggs are added. Add the tomato slices and mushrooms. Fry the mushrooms, turning them over.
As soon as the eggs are well cooked (the yolk should still be liquid), add the cooked beans in tomato sauce to heat them.
Zhou - Rice porridge
Zhou is a Chinese breakfast. It is a rice porridge cooked with meat, chives, ginger or eggs. It is a hot meal, rich in protein and vitamins. Here the recipe:
Ingredients:
- 150 g of rice
- 1/2 teaspoon salt
- 2 teaspoons of vegetable oil
- 1 chicken breast
- 10 g ginger
- 1 teaspoon soy sauce
- 6 fresh or dried shiitake mushrooms
- 1 teaspoon sesame oil
- chopped chives for serving
preparation:
Rinse the rice well and drain it. Mix with the salt and oil and let it rest for at least half an hour.
Bring 2.5 liters of water to a boil in a large pot. Add the rice and cook over low heat for about an hour and a half.
Soak the dried shiitake mushrooms in hot water. Cut in slices. Cut the chicken breast into thin slices. Finely chop the ginger. Marinate the chicken breast slices in soy sauce and ginger.
Add the chicken and mushrooms to the rice five minutes before cooking is done and stir.
Serve in bowls drizzled with sesame oil and sprinkled with chopped chives.
Eggs Benedict
Poached eggs with a rich creamy sauce, all served on a bun with crispy bacon and / or avocado. A dream! This is how the most delicious breakfast is made:
For the hollandaise sauce:
- 80g butter
- 1 egg yolk
- 1 tablespoon white wine vinegar
- 1 shallot
- 1 teaspoon lemon juice
- salt and pepper
For the eggs and toast:
- 2 eggs
- 30 ml of white wine vinegar
- 2 slices whole wheat toast or 1 whole wheat muffin
- 1/2 lemon
For the topping: 2 slices of bacon or smoked salmon or avocado
preparation:
- For the hollandaise sauce, finely chop the shallot and bring to a boil with the vinegar and 30 ml of water. Reduce by half, pass through a strainer and let cool.
- Put the egg yolks and vinegar mixture in a bowl and beat in a double boiler until creamy. After a few minutes, remove from the water bath and continue beating briefly.
- Melt the butter over low heat. Pour the melted butter in a thin stream and stir. Season with lemon juice and salt and pepper.
- For the poached eggs, bring about 2 1/2 liters of water to a boil with the vinegar in a large saucepan. Pour a splash of vinegar into each of the two cups. Carefully break the eggs into the jars, making sure the yolks remain whole. Stir a little in the water with a spoon or whisk. Next, carefully pour the eggs into the water and let them set over low heat for 3-5 minutes.
- Remove the eggs from the water with a slotted spoon. Next, toast the toast or muffin and top with smoked salmon, avocado, bacon, or whatever you like.
- Next, put the poached egg on top and pour the hot hollandaise sauce on top.
Ful Mudammas
Ful mudammas, or foul medammas, are a bean-based dish widely used in the Arab world. It's a spicy, protein-rich and vegetarian breakfast:
The beans are soaked overnight in water and then cooked in the morning and seasoned with salt, garlic, cumin, and other spices. Sometimes the beans are also mashed a bit. They are served with a sauce of finely chopped parsley, lemon juice and chunks of onion. They are served with thin pita bread, feta cheese, boiled eggs, or diced tomatoes.
